Pilar Rum

Named after one of the greatest authors of the twentieth century, Ernest Hemingway, and the boat he used to travel the world, Pilar is an artisan brand based in the U.S. Marrying together rums from around the world, they create two expressions, Blonde and Dark, and pay homage to a great man and drink.

Papa’s Pilar Dark

Papa’s Pilar Dark is made of hand-selected Rums Solera aged in Bourbon and Port Wine casks and finished in Spanish Sherry casks, giving it a spicy and sweet oak wood flavor. It is made up of Rum from Florida, Central America, and the Caribbean. Like most Rums, it has a traditionally sweet overtone but has a wonderfully dark and bitter undertone, full of coffee and dark chocolate, to complement the caramel perfectly.

Papa’s Pilar Blonde

Papa’s Pilar Blonde is the first ever “Blonde” Rum, similar in color to the light rums Papa Hemingway enjoyed in Key West and Cuba during the ’30s. Tasting notes of bright citrus, almond, fresh apricot, and fine butterscotch make this a perfect rum for your Hemingway Daiquiri, boat drink, or tiki cocktail. This exceptionally smooth blend represents the original spirit of rum.

Papa’s Pilar Sherry Cask

After solera aging in Bourbon barrels, Port Wine casks, and Spanish Sherry casks, this unique release blend will further age in Spanish Oloroso Sherry casks extended period, thus creating a flavor profile that boasts a smooth complexity.
